Black Rice Risotto with Mushroom Recipe

Black rice is one of the nutritional foods that you can add to your food. It is also the healthiest rice in the whole world. The deep purple color of the rice is from the anti inflammatory antioxidants that gives the tasty blueberries their rich purple color; anthocyanins. Black Rice Risotto with Mushroom

Here is the list of the ingredients
·         Two tablespoon olive oil
·         One large onion, finely chopped
·         Two cloves of garlic
·         Ten oz. Chopped brown mushroom into one and a half inch pieces
·         One half cup black rice
·         Half cup white wine
·         Six cups  vegetable stock or chicken
·         Freshly cracked  black pepper and salt
·         One cup Parmesan cheese  and for garnish as well

Recipe
Heat one tablespoon olive oil and add onion and garlic and cook them for 3-4 minutes. Add mushroom and stir after that add black rice and stir for 2 minutes. Increase the heat and also add wine and slowly add broth, keep stirring and repeat the process. Make sure there is not too much liquid just so that the rice becomes firm. Cover the rice until they are fully cooked after that adds the Parmesan and mix it well with the rice until it completely melts. Your beautiful Mushroom Risotto is ready. Add a slice of Parmesan, which will be a healthy and tasty contribution to your plate. Also have a glass of wine which you used in cooking and enjoy your delicious and beautiful dish.
